01 / ABOUT THE PLACE

About this place

The considerable heft in your tongs provides the first hint of what awaits; the chewy, supple bite delivers the rest. Set in a residential corner of Takashimadaira, Shimodaryu draws a steady stream of customers for its super-hydrated doughs pushed to their moisture limits, packed with generous portions of ingredients. Shelves are stocked with original creations that highlight the natural sweetness of wheat alongside unconventional flavor pairings.

A natural place to start is the Shimodaryu Mentaiko French Bread, a fixture on many trays. Built on a pain de Lodève style dough that holds high amounts of moisture, it balances an aromatic, crisp exterior with a remarkably tender, chewy crumb. Inside sits a thick ribbon of spicy house-made seasoned pollock roe; a quick reheat at home revives the freshly baked aroma and juicy richness. The bakery's signature Shimodaryu fresh shokupan loaf boasts a hydration level of around 135%, enriched with cultured butter and fresh cream for a soft, clinging texture and gentle sweetness.

The savory and sweet sandwiches are just as substantial. The Haru yo Koi plain bagel an-butter sandwich tucks dense, chewy dough around chunky red bean paste and generous pats of butter, while the robust whole-grain mustard frankfurter pairs a thick sausage with a sturdy crust. Between dense bagel sandwiches loaded with rich cream cheese and nuts, and flaky Isigny croissants scented with French cultured butter, the selection rarely lacks variety.

Sales are takeout only. To keep browsing comfortable and orderly, entry is limited to 6 customers at 1 time. Cash is accepted, making it wise to carry some notes. Given the substantial weight of each loaf and pastry, bringing a sturdy shopping bag with a wide bottom is well worth the preparation.
